Ingredients

2/3 cup flour
1 teaspoon salt

3 lbs stew meat
3 tablespoons oil
1 cup onion , chopped
1 cup green pepper , chopped
2 celery ribs , chopped
1 can crushed tomatoes
2 tablespoons beef bouillon granules , dissolved in
1 cup water
2 teaspoons paprika
1 tablespoon Worcestershire sauce
1 tablespoon parsley , chopped
2 garlic cloves , crushed
1 can beer ( optional ) or 1 1/2 cups water

Instructions

1.Combine flour, salt, and pepper in a zip-top bag and add in the stew meat. Shake until well coated.
2.Heat oil in a large pot over medium-high heat and add in the coated stew meat. Brown on all sides, then remove and set aside.
3.In the same pot, add onion, green pepper, and celery. Sauté until tender.
4.Add in the crushed tomatoes, dissolved beef bouillon granules, paprika, Worcestershire sauce, parsley, and garlic. Stir to combine.
5.Return the browned stew meat to the pot and add in beer or water.
6.Bring to a simmer, then reduce heat and cover, simmering for 2-3 hours until the meat is tender. Stir occasionally.
