Ingredients

2 lbs beef stew meat
2 lbs veal , cut up
1 veal knuckle , bone
2 teaspoons salt
2 teaspoons cumin
2 teaspoons chili peppers
1 can chopped tomatoes with juice
1 can yellow hominy , with juice
2 tablespoons white sugar or 2 tablespoons sugar substitute
6 ears corn , each cob cut into 3 pieces
6 yellow onions , peeled
1 lb fresh green beans , end cuts , kept whole
3 turnips , peeled , kept whole
6 pattypan squash or 6 crookneck yellow squash , vine end cut off
2 large green chili peppers , whole
2 hard green apples , peeled and sliced
1 fresh lemon , cut in half

Instructions

1.Preheat oven to 350 degrees F.
2.In a large oven-safe pot, brown the beef stew meat and veal in batches over high heat until evenly browned on all sides.
3.Remove the meat and set aside.
4.Add the veal knuckle to the pot and brown it on all sides.
5.Add the salt, cumin, and chili peppers to the pot and stir well.
6.Add the canned tomatoes and hominy, along with their juice, to the pot and stir well.
7.Add the browned beef stew meat and veal back into the pot and stir well.
8.Add enough water to the pot to cover the meat completely.
9.Bring the pot to a boil over high heat.
10.Reduce the heat to low, cover the pot with a lid, and place it in the oven.
11.Cook for 1 1/2 hours.
12.After 1 1/2 hours, remove the pot from the oven and add the corn, onions, green beans, turnips, squash, green chili peppers, apples, and lemon halves to the pot.
13.Add enough water to the pot to cover all of the vegetables and fruit.
14.Bring the pot to a boil over high heat.
15.Reduce the heat to low, cover the pot with a lid, and let it simmer for 30 minutes.
16.After 30 minutes, remove the pot from the heat and discard the lemon halves.
17.Serve the beef puchero hot, garnished with fresh cilantro leaves.
