Instructions

1.Preheat oven to 375°F (190°C).
2.Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook beef until browned on all sides, about 5 minutes.
3.Remove beef from skillet and set aside. Add remaining tablespoon of olive oil to the skillet and cook bacon, onion, and carrot until vegetables are softened, about 5 minutes.
4.Add mushrooms and garlic; cook for 2 minutes.

6.Add thyme and bay leaves; bring to a boil. Reduce heat to low; simmer for 1 to 1 1/2 hours or until beef is tender.
7.Remove bay leaves and discard. In a small bowl, mix cornstarch and water until smooth. Gradually stir into beef mixture until well combined; simmer for 2 minutes or until thickened.
8.Pour beef mixture into an 8-inch (20-cm) square baking dish. Roll out puff pastry sheet until it fits over the baking dish, trimming any excess off the edges. Place pastry over beef mixture and brush with beaten egg.
9.Bake in preheated oven for 25 to 30 minutes or until the pastry is golden brown and puffed.
