Ingredients

1 1/2 lbs ground beef
1 medium onion , chopped
1 green bell pepper , chopped
2 garlic cloves , minced
1 package frozen whole kernel corn , partially thawed
1 1/4 cups salsa , medium-hot ( or to taste )
1 tablespoon unsweetened cocoa powder
2 teaspoons ground cumin
1 1/2 teaspoons salt , divided
1 teaspoon dried oregano
1/4 teaspoon cinnamon
2 cups monterey jack cheese or 2 cups cheddar cheese , shredded
1/3 cup fresh cilantro , chopped
1 cup all-purpose flour
3/4 cup yellow cornmeal
3 tablespoons sugar
2 teaspoons baking powder
2/3 cup milk
3 tablespoons butter , melted
1 egg , beaten
fresh cilantro leaves
chili pepper
sour cream ( optional )
Beef Mole Tamale Pie is a twist on a classic Mexican dish that combines spicy ground beef with a sweet cornbread topping. The filling is made with ground beef, onion, bell pepper, garlic, corn, salsa, cocoa powder, cumin, oregano and cinnamon. The whole dish is then topped with a layer of cheese and fresh cilantro before being baked in the oven until golden brown. This recipe is great for a weeknight dinner or as part of a potluck meal. Instructions

1.Preheat oven to 375°F (190°C).
2.Cook ground beef, onion, bell pepper and garlic in a large skillet over medium-high heat.
3.Stir in the corn, salsa, cocoa, cumin, 1 teaspoon salt, oregano and cinnamon.
4.Cook and stir for another 3 minutes or until heated through.
5.Spoon mixture into a 2-quart casserole dish.
6.Mix cheese and cilantro and sprinkle over beef mixture.
7.Combine flour, cornmeal, sugar, baking powder and remaining 1/2 teaspoon salt in a medium bowl.
8.Combine milk, butter and egg in a small bowl.
9.Stir milk mixture into flour mixture until smooth.
10.Pour over beef mixture and then sprinkle with additional cilantro and chili pepper as desired.
11.Bake for 25-30 minutes or until cornbread is golden and filling is bubbly. Let rest for 5 minutes before serving. Optional: serve with sour cream.

CONS
