1 lemon , juice of
3/4 cup extra virgin olive oil , plus extra
extra virgin olive oil
salt & freshly ground black pepper
2 tablespoons extra virgin olive oil
8 fresh sage leaves
8 beef medallions

Instructions

1.Preheat oven to 425°F.
2.In a pot, bring 1 cup milk and 2 cups water to boil. Add garlic and cook for 10 minutes. Drain and set aside to cool.
3.In a blender, combine drained garlic, basil, lemon juice, and 3/4 cup olive oil. Blend until smooth. Season with salt and pepper as needed.
4.Rub beef medallions with extra olive oil and season with salt and pepper. Heat 2 tbsp olive oil in a skillet over medium-high heat. Cook beef for 2-3 minutes per side to brown.
5.Place skillet with beef into the oven and roast for 4-6 minutes until desired doneness. Let rest for 5 minutes before serving with garlic-basil purée on top.
