Ingredients

1 1/4 cups plain flour
50 g butter
1/4 cup water , approx
1 egg , lightly beaten
2 sheets ready rolled puff pastry
2 medium kumara ( about 700g )
1 kg chuck steak
1/4 cup oil
2 medium onions , sliced ( about 300g . )
4 garlic cloves , crushed
1/3 cup fresh oregano
1/2 cup plain flour
1/3 cup tomato paste
1 cup dry red wine
3 cups beef stock
Beef, Kumara & Oregano Pie is a flavorful and hearty meat pie recipe that is perfect for a cold winter night or a lazy Sunday afternoon. Instructions

1.Preheat oven to 180C/350F.
2.Peel the kumara, cut them into 2cm cubes and toss with 1 Tbsp oil.
3.Roast them for 25-30 minutes until golden and tender.
4.Cut the beef into 2cm cubes.
5.In a large pan, heat 1 Tbsp oil over medium heat.
6.Add the onion and garlic. Cook for 2-3 minutes until softened.
7.Add the beef and cook for 3-4 minutes until browned.
8.Stir in the flour, tomato paste, and oregano. Cook for 1-2 minutes until fragrant.
9.Add the red wine and stir to combine.
10.Add the beef stock and bring to a simmer.
11.Reduce the heat to low and cook for 1-2 hours until the beef is tender and the sauce has thickened.
12.Roll out the pastry to fit a 24cm pie dish.
13.Spoon the beef mixture into the dish.
14.Top with the roasted kumara.
15.Cut a lid from the remaining pastry and use it to cover the top of the pie, pressing the edges together to seal.
16.Brush the top of the pie with beaten egg.
17.Bake for 45-50 minutes until golden brown.
