Ingredients

2 lbs stewing beef
4 cups beef broth
4 cups vegetable broth
3 cups chopped kale
2 cups Baby Spinach
1 cup chopped leek , green and white parts
1 cup chopped celery
6 green onions , chopped
1/4 cup chopped red onion
1 tablespoon minced garlic
1 tablespoon sea salt
1/2 teaspoon pepper

Instructions

1.Season the beef with salt and pepper on both sides.
2.Heat a large soup pot over medium heat and add the beef to the pot.
3.Brown the beef on both sides. Remove from pot and set aside.
4.Add the celery, leeks, green onions, red onion, and garlic to the pot. Saute for 3-4 minutes until softened.
5.Add all broth, kale, spinach and beef now to pot. Mix together.
6.Bring the soup to a boil, stirring occasionally, then reduce the heat and let it simmer for 1-2 hours or until the beef is tender.
7.Serve hot with bread and enjoy!
