Ingredients

1 1/2 lbs boneless beef top sirloin steaks , 1 inch thick
2 teaspoons ground black pepper
3/4 teaspoon salt
3/4 teaspoon sweet paprika
2 garlic cloves , minced
1 tablespoon olive oil
1 medium onion , chopped finely
3 garlic cloves , minced
2 jars roasted red peppers , drained , rinsed and finely chopped
1/2 cup dry white wine
2 tablespoons tomato paste
3/4 teaspoon dried thyme , crushed or 2 teaspoons minced fresh thyme
1 cup beef broth
2 teaspoons cornstarch

Instructions

1.In a small bowl, mix together black pepper, salt, sweet paprika, minced garlic and olive oil. Rub the mixture all over the beef and cut the beef into 1-inch cubes.
2.Skewer the beef cubes, alternating each skewer with onion cubes.
3.Heat the grill over medium-high heat and grill for 3-4 minutes until browned on one side.
4.Turn the skewers over and grill for another 3-4 minutes until browned and cooked to the desired doneness.
5.In a saucepan, sweat minced garlic in olive oil and add roasted red peppers, dry white wine, tomato paste, dried thyme, beef broth, and cornstarch. Simmer for 5-10 minutes or until thickened to make the roasted red pepper sauce.
6.Serve the beef kabobs hot with the roasted red pepper sauce on the side.
