750 g filet of beef
2 medium onions , finely chopped
2 cups beef stock
2 cups couscous
2 medium tomatoes , finely chopped
1/3 cup of fresh mint , finely chopped
1/3 cup slivered almonds , toasted

Instructions

1.Preheat oven to 200°C/180C fan-forced
2.Combine curry paste and beef in a large bowl. Season.
3.Heat a large, non-stick frying pan over high heat. Cook beef for 2 mins each side or until browned. Transfer beef to a baking dish. Roast for 15 mins for medium or until cooked to your liking. Rest for 10 mins.
4.Meanwhile, in a saucepan, heat oil on medium. Cook onion for 2-3 mins or until softened. Add stock and 1/4 cup water. Bring to the boil. Place couscous in a large heatproof bowl. Pour over boiling stock mixture. Stir. Cover and set aside for 5 mins or until liquid is absorbed. Use a fork to fluff and separate grains.
5.Add tomato and mint to couscous. Stir to combine. Season.
6.Slice beef and serve on couscous. Sprinkle with almonds.
