Ingredients

long beef rib eye steak
1 brown onion
5 garlic cloves
1 whole tomatoes or 1/4 cup tomato paste
1 carrot , sliced
1/4 cup peppercorn
1 1/2 cups shiraz wine or 1 1/2 cups red wine
2 cups beef stock or 1 Oxo beef cube , in 2 cups
4 sprigs thyme
3 -4 sprigs rosemary
8 potatoes , for mash or 5 parsnips and 4 potatoes
100 g butter
1 dash milk
salt and pepper
1 teaspoon coarse grain mustard

Instructions

1.Preheat oven to 200°C. Season the beef with salt and pepper.
2.Heat a lightly oiled frying pan over high heat, add the beef and cook for 2-3 minutes on each side or until well browned.
3.Transfer the beef to a roasting pan and roast for 15-20 minutes for rare, or until cooked to your liking. Allow the beef to rest for 10 minutes before slicing.
4.Meanwhile, in the same frying pan, add the onion and garlic and cook for 2-3 minutes or until softened.
5.Add the tomato, carrot, peppercorns, wine, beef stock, thyme, and rosemary. Bring to the boil and then reduce the heat and simmer for 20-25 minutes or until the gravy is reduced by half.
6.Blend the gravy in a blender and then strain it through a fine sieve. Adjust the seasoning with salt and pepper.
7.Serve the beef with the gravy, mashed potatoes/parsnips, and steamed vegetables. Enjoy!
