Ingredients

1 tablespoon olive oil

1.5 packages frozen puff pastry , thawed ( 3 sheets )
3 large egg yolks , beaten ( for glaze )
1 can black beans , drained and rinsed
1 cup sour cream
2 roma tomatoes , seeded , chopped , divided
2 large scallions , chopped , divided

Instructions

4.Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg yolks. Bake in the preheated oven for 15-20 minutes until golden brown and heated through.
5.While the empanadas are baking, make the black bean dipping sauce. In a food processor or blender, blend together the drained and rinsed black beans, sour cream, 1 chopped roma tomato, 1 chopped scallion, salt, and pepper until smooth.
6.Serve the hot beef empanadas with the cold black bean dipping sauce.
