Ingredients

1 1/2 lbs ground beef
1/2 cup carrot , minced
1/4 cup onion , minced
1/4 cup red bell pepper , small diced
1/3 cup tomato sauce
1/2 cup monterey jack cheese
2 tablespoons pickle relish
2 garlic cloves , minced
1/2 cup panko breadcrumbs ( may use bread crumbs )
3 eggs , beaten
salt and pepper
2 hot dogs , sliced horizontally
2 hard-boiled eggs , quartered
Reynolds Wrap Foil , 3-4 cut pieces , about 12 inches
4 -5 peaches , peeled , cored and quartered
1/2 cup sugar ( may use 1/4 c white and 1/4 cup brown sugar )
1 cup water
1 - 1 1/2 tablespoon lemon juice
1 -2 tablespoon honey
1 pinch salt ( to taste )
1/4 cup fresh parsley , finely chopped
Beef Embutido with Peach Sauce is a popular main dish from the Philippines. It is a versatile food with different variations of preparation and serving. Instructions

1.In a mixing bowl, mix together the ground beef, carrot, onion, red bell pepper, tomato sauce, monterey jack cheese, pickle relish, minced garlic, panko bread crumbs and beaten eggs. Season with salt and pepper. Combine well.
2.Cut the aluminum foil into 12-inch pieces and place the ground beef mixture in the center. Flatten and layer the hot dog slices and quartered hard-boiled eggs on top of the beef mixture.
3.Roll the foil over the beef mixture tightly, resembling a log, about 10-12 inches in length. Twist both sides to seal and tuck the ends.
4.Place the beef embutido in boiling water and let cook for 1 hour.
5.Prepare the peach sauce while waiting. In a saucepan, combine the peeled, cored and quartered peaches, sugar, water, lemon juice, honey, and sesame oil.
6.Cook over a medium fire until the peaches become tender and the sauce thickens slightly, about 20-25 minutes. Add salt to taste.
7.Unwrap the beef embutido from the foil and serve with peach sauce and garnish with parsley.
