Ingredients

1 1/2 kg chuck steaks
1/2 cup plain flour
1/4 cup olive oil
1 brown onion , finely chopped
2 carrots , peeled and chopped
12 garlic cloves , peeled
1 cup dry red wine
3 cups beef stock
2 swedes , peeled and chopped
3 potatoes , peeled and chopped
4 sprigs fresh thyme
fresh thyme , to garnish
1 2/3 cups self raising flour
salt and pepper
60 g butter , cold & chopped
1 tablespoon fresh parsley , chopped
1/2 cup buttermilk
Beef Casserole With Herb Dumplings is a classic dish that has been enjoyed by families for generations. Instructions

1.Preheat oven to 150°C.
2.Cut chuck steaks into 2cm cubes. Season with salt and pepper and coat with plain flour. Heat a tablespoon of olive oil in a heavy-based casserole dish and brown the meat.
3.Add the finely chopped onion to the casserole dish. Stir for a minute, then add the peeled and chopped carrots and garlic cloves. Cook for another minute before adding 1 cup of dry red wine and scraping the bottom of the pan to ensure it won't burn.
4.Add 3 cups of beef stock, the peeled and chopped swedes and potatoes and four sprigs of fresh thyme (leaves only) into a casserole dish. Bring to the boil, then cover and transfer to the oven for 2 hours.
5.For the herb dumplings, mix self-raising flour, seasoning and 60g of cold and chopped butter together until crumbly. Add one tablespoon of fresh chopped parsley, half cup of buttermilk and a tablespoon of water. Mix together to form a dough. Divide into 12 balls and press onto the casserole 20 minutes before the dish is finished cooking.
6.Optional: Garnish with fresh thyme before serving.
