7 lbs beef bones
olive oil , for coating the bones
1 large onion , unpeeled , coarsely chopped
1 large carrot , coarsely chopped
1 celery , with tops coarsely chopped
1/4 cup mushroom
1 head garlic
5 sprigs fresh Italian parsley
5 sprigs fresh thyme
2 bay leaves
10 peppercorns
6 -7 quarts water

Instructions

1.Preheat oven to 425°F.

5.Add enough water to cover the ingredients, then bring to a boil over medium-high heat.
6.Skim the impurities that rise to the surface and add the Italian parsley, thyme, bay leaves, and peppercorns.
7.Reduce the heat to a gentle simmer and let the broth cook for 6-7 hours, or until the liquid reduces by at least one-third.
8.Once the broth is done, strain it through a fine mesh sieve into a container.
9.Serve hot.
