Ingredients

4 -5 lbs first-cut beef brisket
salt & fresh ground pepper , to taste
2 tablespoons olive oil
2 cups chopped onions
1/2 cup carrot , chopped small
2 garlic cloves , finely chopped
1 can plum tomatoes , with juice
2 cups merlot
1 bay leaf
2 tablespoons olive oil
3 cups thinly sliced sweet onions ( such as Vidalia or Spanish )

1/2 cup dried cherries , pitted

Instructions

1.Preheat oven to 325°F.
2.Generously salt and pepper brisket on both sides.
3.Heat 2 tablespoons olive oil in heavy large oven-proof pot over medium-high heat.
4.Add brisket and sauté until brown, about 6 minutes per side.
5.Transfer brisket to plate.
6.Add chopped onions and chopped carrot to pot.
7.Sauté until vegetables begin to brown, about 8 minutes.
8.Add garlic and sauté 1 minute.
9.Add tomatoes with juices, Merlot, and bay leaf; bring to boil, scraping up any browned bits.
10.Return brisket to pot, spooning some sauce over.
11.Cover pot with heavy-duty foil or lid and bake in oven until brisket is tender, about 3 hours.
12.Meanwhile, heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat.
13.Add sliced onions and sauté until tender, about 10 minutes.
14.Add dried cherries and sauté until onions are brown and caramelized, about 8 minutes longer.
15.Season onion mixture with salt and pepper.
16.Cut brisket crosswise into thin slices.
17.Spoon sauce over brisket slices and top with cherry-onion mixture.
