Ingredients

12 slices top round beef , about 1/4 inch thick
1/4 lb italian salami , minced
1/2 lb veal , ground
1/2 cup grated parmesan cheese
2 tablespoons butter , softened
1 cup soft white breadcrumb
1/2 cup milk
2 tablespoons minced parsley
1 egg , beaten
salt and pepper
12 very thin slices prosciutto
2 tablespoons olive oil

1 large onion , chopped
2 carrots , chopped
1 bay leaf
3/4 - 1 cup dry white wine
1 can plum tomatoes , sieved ( about 2 lbs . )

Instructions

1.Take a large bowl and mix together bread crumbs, grated parmesan cheese, ground veal, soft minced Italian salami, beaten egg, parsley, milk, 2 tablespoon softened butter, salt, and pepper.

3.Place each slice of beef on a board and place thin slices of prosciutto over it.
4.Now, spread a thick layer of the mixture over the prosciutto.
5.Carefully roll-up each slice and hold with a toothpick.
6.Take a large heavy skillet and heat olive oil and 2 tablespoons of butter over medium heat.
7.Add finely chopped garlic and chopped onions and cook until soft and light brown.
8.Add bay leaf, carrots, sieved plum tomatoes, dry white wine, and pour salt and pepper to taste.
9.Remove the toothpicks from the beef rolls and place them in the skillet over the sauce.
10.Cook over low heat for about an hour.
11.Serve hot and enjoy.
