Ingredients

1 tablespoon sunflower oil
7 ounces bacon , chopped into lardons
2 lbs stewing beef , cut into 1in chunks
salt and pepper
8 ounces button mushrooms
8 ounces baby onions or 8 ounces shallots , peeled
2 garlic cloves , crushed
1 tablespoon brown sugar
2 1/2 cups red wine
1 2/3 cups beef broth
2 tablespoons cornstarch , loosened with 1-2 tbsp red wine or 2 tablespoons water
2 lbs floury potatoes , quartered
2 ounces unsalted butter
7 tablespoons milk

Instructions

1.Preheat oven to 350F.
2.Heat the oil in a large cast iron casserole and fry the bacon until crisp and golden brown. Remove it using a slotted spoon and set it aside.

4.Add mushrooms and shallots to the pan and sauté for 5 minutes.

7.Return the beef and bacon to the pan and stir to combine. Cover the pan and cook for 2.5-3 hours until meat is tender. Add cornstarch and stir until the sauce is thickened.
8.Meanwhile, boil the potatoes in a pan of salted water until soft. Drain and mash them with unsalted butter and milk.
9.Once the beef mixture is cooked and thickened, transfer it into a large casserole dish. Top with mashed potatoes and flatten with a fork.
10.Place the casserole in the preheated oven and bake for about 25-30 minutes until the potatoes are golden brown and crispy on top. Serve hot and enjoy!
