Ingredients

1/4 cup peanut oil
1 teaspoon ginger , finely chopped
1/2 teaspoon garlic , finely chopped
1 long red chili pepper , finely sliced on the diagonal
200 g filet of beef , finely sliced
2 tablespoons fermented black beans
4 shiitake mushrooms , stalks removed
6 oyster mushrooms
2 tablespoons rice wine ( shao xing )
2 tablespoons palm sugar
2 tablespoons light soy sauce
4 tablespoons oyster sauce
1 kg fresh flat rice noodles or 1 kg vietnamese rolled rice noodles
1/2 cup gai lan ( Chinese broccoli leaves )
2 spring onions , cut into 3cm lengths
1/4 teaspoon sesame oil
1 pinch white pepper
Beef, Black Beans and Rice Noodles with Oyster Sauce is a popular Cantonese-style dish that is often served in Chinese restaurants. Made with thin slices of tender beef, this dish is stir-fried with fermented black beans, shiitake mushrooms and oyster mushrooms, and served over a bed of soft and silky rice noodles. Instructions

1.Heat the peanut oil in a wok over high heat.
2.Add the ginger, garlic and chili pepper and stir-fry until fragrant.
3.Add the beef and stir-fry for 1 minute until browned.
4.Add the black beans, shiitake and oyster mushrooms and stir-fry for 1 minute.
5.Add the rice wine, palm sugar, soy sauce and oyster sauce and stir-fry for 1 minute.
6.Reduce the heat to medium and add the rice noodles, gai lan and spring onions.
7.Stir-fry for 2-3 minutes until the noodles are heated through and the vegetables are tender-crisp.
8.Remove from heat and stir in the sesame oil and white pepper. Serve hot.
