Ingredients

2 teaspoons olive oil
1 lb chuck or 1 lb stewing beef , cut into pieces
1 onion , thinly sliced
4 beets , trimmed , peeled and diced
3 carrots , sliced
1 cup cabbage , sliced
1 can tomatoes , chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
8 cups beef broth ( I used 1 can chicken broth and 1 can beef broth )

Instructions

1.In a pan heat olive oil over medium heat.
2.Add beef and onion and cook until beef is browned and onion is soft.
3.Add the beef mixture, beets, carrots, cabbage, tomatoes, salt, pepper, bay leaf and beef broth to a slow cooker.
4.Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.

This soup takes a long time to cook, so plan ahead accordingly.
