Ingredients

2 quarts beef stock or 2 quarts broth
1 cup diced carrot
1 cup diced celery
1 cup diced onion
1 teaspoon olive oil
2 tablespoons minced garlic
2 cups cooked pearl barley
1 teaspoon oregano
1 teaspoon basil
2 bay leaves
1/2 teaspoon black pepper
salt , optional ( to taste )
1 lb beef , already cooked ( ground , shredded or chopped )
2 cans crushed tomatoes or 1 quart tomato juice
Beef Barley Soup is a classic comfort food that is easy to make and delicious to eat. The soup is made with beef stock, diced carrots, celery, and onion, and cooked pearl barley. The vegetables and grains make the soup filling and substantial, while the beef adds protein and flavor. Instructions

1.Heat the olive oil in a large pot over medium heat.
2.Add the diced onion, carrot, and celery to the pot and cook until tender, stirring occasionally.
3.Add the minced garlic to the pot and stir for 1-2 minutes, until fragrant.
4.Pour in the beef stock or broth, crushed tomatoes or tomato juice, cooked pearl barley, oregano, basil, bay leaves, black pepper, and optional salt. Bring the mixture to a boil, then reduce the heat.
5.Let the soup simmer for at least 30 minutes to allow the flavors to meld together.
6.Add the cooked beef to the soup and let it heat through before serving. Remove the bay leaves before serving.
