2 -4 tablespoons canola oil
3 tablespoons flour

2 stalks celery , chopped
8 medium carrots , chopped
8 ounces sliced mushrooms ( about 2 - 2 1/2 cups ) ( optional )
4 cups tomato juice
1 cup water
3/4 cup pearl barley
16 ounces stewing beef , diced
extra water , as needed

Instructions

6.Reduce the heat to low, cover and let it simmer gently for 1 1/2 hours, stirring occasionally.
7.Add extra water if needed and add salt and pepper to taste.
