Beef and Poblano Fajitas are a popular Tex-Mex dish that has become a staple at many Mexican restaurants in the United States. This flavorful dish features marinated beef, grilled peppers, and onions, all wrapped in a warm tortilla and topped with lime juice and hot sauce. Fajitas originated in the Rio Grande Valley in Texas, where cattle ranchers used to give workers the less desirable cuts of meat, such as skirt steak. Today, fajitas are enjoyed all over the world and have become a symbol of Tex-Mex cuisine. In this recipe, we add tequila to the marinade to give the beef an additional depth of flavor and spice.

Instructions

.In a mixing bowl, combine garlic paste, lime juice, tequila, cilantro, 1 tablespoon vegetable oil, Worcestershire sauce, oregano, ancho chile powder, cumin, salt, and pepper to make the marinade.
.Add the skirt or flank steak to the bowl with the marinade and mix well, making sure the steak is fully coated.
.Cover the bowl and marinate in the refrigerator for at least 2 hours or overnight.
.Heat the remaining vegetable oil in a pan on medium heat.
.Cook the onion and poblano pepper slices in the pan until they become tender and slightly brown.
.Increase heat to high and add marinated steak to the pan and cook until the steak is browned, crispy, and cooked to your liking, about 2-3 minutes on each side.
.Using a sharp knife, slice the steak across the grain into thin slices and give a final toss with the onions and peppers until everything is mixed well.
.Heat tortillas on a warm griddle.
.Divide steak and vegetable mixture evenly among the tortillas.
.Serve with lime wedge and hot sauce on the side, and if desired guacamole, tomato salsa, and sour cream as additional side options.
