Ingredients

1 tablespoon olive oil
1 brown onion , finely chopped
600 g beef mince
3 teaspoons curry powder
1/4 cup tomato paste
300 g kumara , peeled and grated ( orange sweet potato )
1/2 cup water
4 sheets puff pastry , thawed
Beef and Kumara pasties are a classic New Zealand pastry that has been enjoyed by generations. Instructions

1.Preheat the oven to 200°C or 180°C fan-forced.
2.Heat oil in a large frying pan over medium heat. Cook onion, stirring, for 3-4 minutes or until soft. Add beef. Cook, stirring with a wooden spoon to break up any lumps for 5-6 minutes or until browned.
3.Meanwhile, in a bowl, combine curry powder, tomato paste, kumara, and water. Stir the mixture to mix well.
4.Add the kumara mixture to the beef and cook, stirring occasionally for 4-5 minutes or until slightly thickened.
5.Place pastry sheets on a floured surface. Using a knife, cut each sheet in half. Spoon the beef mixture over pastry rectangles, leaving a 1cm border around edges.
6.Brush borders with water. Fold each rectangle in half to enclose filling. Press the edges to seal.
7.Place the pasties on a lightly greased baking tray. Brush with egg and bake for 20-25 minutes or until pastry is golden brown and puffed. Serve.
