The Beef and Guinness Stew With Dumplings is a classic Irish recipe that has been enjoyed for generations. It is a hearty and filling meal that is perfect for cold winter nights. The rich flavors and aromas of beef, mushrooms, and Guinness make this stew a favorite among foodies. Though a popular recipe to serve on St. Patrick's Day, this dish can be made any time of year. If you're feeling adventurous, try making your own dumplings to add some texture and flavor to the dish. Serve with a side of mashed potatoes for a complete meal.

Instructions

1.Heat a large saucepan over medium-high heat. Coat the beef cubes in flour, shaking off any excess.
2.Place the olive oil in the saucepan, followed by the beef cubes. Brown the beef for 5 minutes, then add in the celery, onion, carrot, and mushrooms.
3.Cook for a further 5 minutes, or until the vegetables are lightly golden. Stir in the tomato paste, followed by the Guinness beer, beef stock, and bay leaves. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1-2 hours or until the beef is tender.
4.If using, prepare the dumplings by combining the flour, baking powder, salt, and butter in a bowl. Rub the butter into the flour until the mixture resembles breadcrumbs. Add the milk and stir to form a dough.
5.Divide the dough into 8 balls and place them on top of the stew. Cover the saucepan and simmer for an additional 15-20 minutes, or until the dumplings are cooked through.
6.Stir in the chopped parsley and serve hot with mashed potatoes.
