2 cups beef stock
4 slices bacon , chopped
1/4 teaspoon dried thyme
1 orange , rind pared only

Instructions

1.Preheat oven to 160C (fan) / 180C (conventional).
2.Heat oil in a large oven-safe casserole dish over high heat.
3.Add beef and brown in batches, then remove and set aside.
4.Add onions and garlic to the same dish, and cook until soft.
5.Return beef to the dish, sprinkle with flour and stir.
6.Add stout, beef stock, bacon, thyme and orange rind to the dish and stir.
7.Bring to a simmer, then cover with a tight-fitting lid.
8.Transfer to the oven and cook for 2 to 2 1/2 hours or until meat is tender.
