Ingredients

1/4 cup mayonnaise

1 small poblano chile
1 lb lean ground beef ( at least 80 % )
1/2 lb bulk chorizo sausage ( fresh sausage ) or 1/2 lb Italian pork sausage , crumbled ( fresh sausage )
3/4 teaspoon salt
1/4 teaspoon pepper
4 slices monterey jack cheese
4 hamburger buns , split
1 medium tomatoes , coarsely chopped
These Beef and Chorizo Burgers With Roasted Chile Mayo take traditional burgers to the next level. The addition of chorizo adds bold and spicy flavors to the beef, while the roasted chile mayo provides a smoky and creamy topping. Instructions

1.Preheat grill to medium-high heat.
2.Combine mayonnaise, garlic, lime juice, and cilantro in a small bowl.
3.Roast poblano chile over direct heat on a grill or gas stovetop flame until charred all over.
4.Transfer poblano to a bowl and cover with plastic wrap. Let steam until skin peels off easily, then discard skin, stems, and seeds. Coarsely chop poblano and stir into mayonnaise mixture.
5.Combine beef, chorizo, salt, and pepper in a large bowl. Mix with your hands until everything is well combined. Do not overmix.
6.Form beef mixture into four ¾-inch-thick burgers. Use your thumb to make a shallow indentation in the center of each patty. This helps the patties cook evenly and prevents them from puffing up while cooking.
7.Grill burgers to desired doneness, about 4 to 5 minutes per side for medium. When burgers are almost done, top each patty with a slice of cheese and let it melt while burgers cook.
8.Toast buns on the grill if desired. Spread a tablespoon of roasted chile mayo onto each bun. Top with burgers and chopped tomatoes.
