Ingredients

1 large onion , chopped
1 1/2 lbs lean ground beef
4 garlic cloves , minced
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 teaspoon salt
2 tablespoons chili powder
1 canned stewed tomatoes
2 cups fresh corn kernels or 2 cups frozen corn kernels
1/2 cup chopped fresh cilantro
1 1/2 cups grated monterey jack pepper cheese , divided
1 1/2 cups grated sharp cheddar cheese , divided
3 cups reduced-sodium chicken broth
1 teaspoon salt
2 cups yellow cornmeal
2 cups cold water
1 cup low-fat plain yogurt
1/3 cup low-fat plain yogurt
3 tablespoons heavy cream ( can use light )
1/2 cup canned diced tomato , drained
sour cream ( optional )
1 can pitted black olives ( optional )
Beef and Cheese Tamale Pie is a twist on the classic Mexican dish, tamale. It is a hearty meal that combines lean ground beef, sautéed onions and garlic, canned stewed tomatoes, and fresh corn kernels, all seasoned with oregano, cumin, chili powder, and cilantro. The filling is then topped with a delicious cornmeal and cheese mixture, which is cooked to golden brown perfection. Instructions

1.Preheat oven to 400°F and lightly grease a 9x13 inch baking dish.
2.In a large skillet, sauté the chopped onion until softened.
3.Add the minced garlic and ground beef, cooking until the beef has browned and is no longer pink.
4.Add the oregano, cumin, salt, chili powder, and canned stewed tomatoes, stirring to combine.
5.Mix in the fresh or frozen corn and chopped cilantro, cook for 2-3 minutes.
6.Stir in 1 cup each of the grated Monterey Jack and sharp cheddar cheeses and turn off heat.
7.Meanwhile, in a medium saucepan, combine the chicken broth and salt and bring to a boil.
8.Gradually add in the cornmeal, whisking constantly to prevent lumps.
9.Reduce heat to low and cook, stirring frequently, for 15 minutes or until the mixture has thickened.
10.Remove from heat and stir in 1 cup each of the remaining cheeses and 1 cup of plain yogurt and heavy cream.
11.Spread half of the cornmeal mixture into the prepared baking dish and make a well in the center.
12.Spoon in the beef and cheese mixture, spreading evenly.
13.Top with the remaining cornmeal mixture and spread evenly.
14.Bake in the preheated oven for 30 minutes or until golden brown and bubbling.
15.Let cool for 10 minutes before serving with additional plain yogurt, diced tomatoes, and optional sliced black olives on top.
