Ingredients

1 lb thin-cut round steak , trimmed of all fat and cut into small strips
salt , to taste ( optional )

1 cup chopped onion
1 red bell pepper , seeded and cut into 1/2 inch wide strips
1 tablespoon olive oil
1/2 cup fat-free low-sodium chicken broth or 1/2 cup regular chicken broth , divided
1 can low-sodium tomato sauce or ( 15 ounce ) can regular tomato sauce
1 can water-packed artichoke hearts , quarters drained and tough outer leaves removed
1 1/2 teaspoons italian seasoning
4 ounces penne pasta , cooked according to package directions

Instructions

1.Season the beef strips with salt and pepper.
2.Heat the olive oil in a large skillet over medium-high heat.
3.Add the beef strips and cook for 3-5 minutes, or until browned.
4.Add the onions and red bell pepper to the skillet and cook for an additional 5 minutes.
5.Pour in 1/4 cup of the chicken broth and stir to deglaze the skillet.
6.Add the tomato sauce, artichoke hearts, Italian seasoning, and the remaining 1/4 cup of chicken broth to the skillet.
7.Reduce the heat to low and simmer for 10-15 minutes, or until the sauce has thickened.
8.Serve the beef and artichoke skillet over cooked penne pasta.
