6 mini meringues , roughly crushed

Instructions

1.Preheat the oven to 220°C. In a baking tray, mix together the rhubarb, caster sugar, orange juice, and rose petals.
2.Roast the mixture in the oven for about 10-15 minutes until the rhubarb is tender but still holding its shape.
3.While the rhubarb is roasting, roughly crush the mini meringues in a bowl.
4.Once the rhubarb is done, leave it to cool.
5.In a separate bowl, mix the Greek yogurt and the crushed meringues together.
6.To assemble, spoon the yogurt mixture into a glass or bowl, then top with the cooked rhubarb and sprinkle with chopped pistachios and extra rose petals.
