Ingredients

2 boneless skinless chicken breasts
1/4 teaspoon salt ( or to taste )
1/4 teaspoon black pepper , freshly ground ( or to taste )
1/4 teaspoon onion powder
1/4 teaspoon Mexican chili powder , hot
1/4 teaspoon garlic powder
2 tablespoons olive oil
4 flour tortillas
1 cup cheese , shredded ( I use a Mexican cheese blend found at my local grocery store consisting of Cheddar , Monterey Jack , A )
2 tomatoes , sliced thin ( about 12 slices )
2 tablespoons cilantro , coarsely chopped
2 tablespoons scallions , sliced thin

Instructions

1.Preheat a grill pan over medium-high heat.
2.Season the chicken breasts with salt, black pepper, onion powder, Mexican chili powder, and garlic powder on both sides.
3.Drizzle the olive oil over the seasoned chicken breasts and rub to coat them evenly.
4.Grill the chicken breasts for about 5-6 minutes per side or until cooked through.
5.Remove the chicken breasts from the pan and let them rest for a few minutes before slicing them into thin strips.
6.Place a flour tortilla on a flat surface and sprinkle a quarter cup of shredded cheese on one side.
7.On top of the cheese, arrange three slices of tomato and a tablespoon each of cilantro and scallions.
8.Add the sliced chicken strips on top of the vegetables.
9.Sprinkle another quarter cup of shredded cheese on the chicken.
10.Fold the other half of the tortilla over the toppings and press down gently.
11.Repeat the process with the remaining tortillas and toppings.
12.Heat a non-stick skillet over medium heat.
13.Place a quesadilla in the skillet and cook for about 3-4 minutes on each side until the cheese is melted and the tortilla is crispy.
14.Repeat the process with the remaining quesadillas.
15.Serve the quesadillas hot with your favorite dipping sauce.
