Beaten biscuits are a traditional Southern delicacy that were born out of a shortage of leavening agents during the American Civil War. These biscuits are unique in that they must be beaten vigorously for 30 minutes before they are ready to roll and bake. While this may seem like a lot of work, the result is a biscuit that is light and fluffy, yet crispy on the outside. Beaten biscuits were a staple in Southern households for generations and are still enjoyed today as a savory and satisfying breakfast or snack.

Instructions

1.Preheat oven to 400°F (200°C).
2.In a large mixing bowl, whisk together flour, salt, baking powder, and white sugar.
3.Cut lard into small pieces and add it to the flour mixture until the mixture resembles coarse sand.
4.Slowly add light cream to the mixture while stirring, until the dough forms.
5.With the dough still in the bowl, use a wooden spoon or mallet to beat it vigorously for at least 30 minutes.
6.Roll the dough out onto a floured surface and use a biscuit cutter to cut the biscuits to size.
7.Place the biscuits on a greased baking sheet and bake for 15-20 minutes, or until golden brown on top.
