1 lb ground beef

Bea's enchiladas recipe is a classic, flavorful, and very popular Mexican dish. It is a combination of some of the best ingredients Mexico has to offer, including ground beef, black beans, tomato sauce, and chilies. In this unique recipe, cheese is generously sprinkled on top of tortillas wrapped around savory beef and black beans filling. It is then covered with an aromatic tomato sauce. These enchiladas are then baked in an oven till the cheese melts and the sauce is cooked to perfection. This recipe can be enjoyed with your choice of side dish, including rice, salad, or beans.

Instructions

1.In a large skillet, cook and stir ground beef over medium heat.
2.Add garlic, salt, vinegar, water, and chili powder to it. Cook for 5 minutes while stirring.
3.Add black beans, minced garlic, chopped onions, and cook for 5 minutes with stirring occasionally.
4.In another saucepan, pour oil and tomato sauce. Add vinegar, beef bouillon cube, water, green chilies, cumin, salt, and pepper. Cook and stir it for 10-15 minutes until slightly thick.
5.Preheat the oven to 350F.
6.Spread about 2-3 spoons of the sauce on the bottom of a 9x13 inch baking dish. Reserve the rest of the sauce for later use.
7.Fill each tortilla with the beef and bean mixture and roll it. Place all enchiladas in the baking dish seam side down.
8.Pour the remaining sauce over the enchiladas. Spread the shredded cheese over the top. Cover and bake for 20 minutes. Then uncover and bake for another 10 minutes until the cheese is melted and golden.
