1 cup black-eyed peas , soaked overnight
1 cup onion , finely chopped
3 dried red chilies
1 tablespoon curry powder
1 teaspoon chili powder
1 teaspoon garlic , minced
1 teaspoon ginger , minced
1 tablespoon whole mustard paste
1/2 teaspoon turmeric
1 cup broth or 1 cup water
2 cups chopped tomatoes
6 tablespoons cooking oil
salt and pepper
1 tablespoon chopped cilantro ( to garnish )

Instructions

1.In a large pot, heat 4 tablespoons of cooking oil over medium heat.
2.Add the chopped onions and sauté until they turn soft and golden brown.
3.Add minced garlic, ginger, and dried red chilies and sauté for another 1-2 minutes.
4.Add the curry powder, chili powder, and turmeric and fry for a few seconds.
5.Add the tomato and stir well, cook until the tomatoes become soft.
6.Add the chopped potato, black-eyed peas, and fermented bamboo shoot.
7.Add broth or water and bring it to a boil. Let the mixture cook until potatoes are tender.
8.Add the mustard paste and stir well. Cook for another 2-3 minutes.
9.Garnish with chopped cilantro and serve hot with rice or roti.
