Instructions

1.Fill a large dish with warm water and submerge the dried bean curd skin to soften it for 5-10 minutes. Drain and set aside.

3.Lay out the softened bean curd skin on a clean, flat surface. Layer the mango strips, spring onions, bean sprouts, and snow pea sprouts on top of the skin.
4.Squeeze the juice of half an orange over the top of the ingredients. Drizzle with soy sauce or fish sauce and Tabasco sauce. Sprinkle with fresh coriander.
5.Tightly roll up the bean curd skin around the filling, tucking in the sides as you go.
