Ingredients

1 lb sweet potato , peeled and diced
3 tablespoons olive oil
2 teaspoons cumin seeds
2 teaspoons coriander seeds
1 medium onion , sliced thinly
2 garlic cloves , crushed
1 small red chili , de-seeded and finely chopped
1 teaspoon paprika
400 g tinned chopped tomatoes
1/2 medium red pepper , diced
1/2 medium green pepper , diced
280 g tinned red kidney beans , rinsed and drained
225 g tortilla chips ( corn )
225 g cheddar cheese
2 tablespoons chopped coriander , leaf
1 medium avocado , peeled , stoned and sliced
125 ml sour cream
1 fresh tomato , peeled and chopped
3 drops hot pepper sauce
1 tablespoon lemon juice
Bean and Sweet Potato Nachos are a fun twist to the traditional Nachos recipe. The combination of savory sweet potatoes and beans with the spicy tomato sauce creates a delicious and satisfying dish. Instructions

1.Preheat oven to 200C or 400F.
2.In a large bowl, mix the sweet potatoes with 2 tablespoons of olive oil, cumin seeds, coriander seeds, and paprika. Spread the mixture in a baking dish and bake for 20 minutes or until the sweet potatoes are tender.
3.Meanwhile, heat up 1 tablespoon of olive oil in a large pan over medium heat. Add in the sliced onion and garlic, and cook until the onion is translucent. Stir in the chopped chili, chopped tomatoes, red pepper, and green pepper. Simmer for 5 minutes or until the peppers are tender. Add the rinsed and drained beans and cook for an additional 2 minutes until heated through.
4.In another baking dish, arrange tortilla chips in a single layer. Place the bean mixture over the tortilla chips and top with cheddar cheese. Place in the oven and bake for 5-7 minutes or until the cheese is melted.
5.Top with chopped coriander leaves, sliced avocado, sour cream, chopped fresh tomato, hot pepper sauce, and lemon juice.
6.Serve immediately.
