1 1/2 cups cooked pork , shredded bbq grilled or 1 1/2 cups cooked chicken , grilled
2 cups barbecue sauce
1 can pinto beans , drained and rinsed
1 lime
1 tablespoon cajun seasoning
2 medium tomatoes , ripe , roughly chopped
2 pickled jalapeno peppers , chopped
1/2 cup fresh cilantro , loosely packed , roughly chopped , plus additional for garnish
7 ounces white corn tortilla chips
1/3 cup sour cream , plus additional
sour cream , for garnish
12 ounces shredded cheddar cheese
salt and pepper

Instructions

1.Preheat oven to 375 degrees F.
2.In a saucepan, heat barbecue sauce, cajun seasoning, and pinto beans until warmed through.
3.Layer corn tortilla chips into a 9” x 13” baking dish.
4.Cover with half the BBQ sauce mixture and half of the shredded cheese.
5.Add another layer of tortilla chips, and cover with remaining BBQ sauce and cheese.
6.Bake for 10-12 minutes, until cheese is melted and bubbly.
7.Remove from oven and top with cooked pork or chicken, tomatoes, jalapenos, cilantro, and sour cream.
8.Serve immediately.
