1 kg beef
1 tablespoon oil
1 medium brown onion , chopped
1 tablespoon fresh ginger , finely chopped
3 garlic cloves , finely chopped
2 red chilies , finely chopped
1 teaspoon tamarind paste
1/2 teaspoon turmeric
1 tablespoon ground cumin
1 tablespoon ground coriander
5 cloves , ground
1 teaspoon shrimp paste
1 tablespoon lemongrass , finely chopped
2 star anise , ground ( optional )
2 tablespoons water ( as required )
1 tablespoon brown sugar
8 curry leaves , torn
1 cinnamon stick
2 tablespoons soy sauce
4 tablespoons fish sauce
1 can coconut cream

Instructions

1.Heat the oil in a large heavy-based pot over medium heat, add onion, ginger, garlic, and red chili then stir well for approximately 2–3 minutes or until the onion is softened.
2.Add in beef and brown it for 5 minutes while stirring occasionally.
3.Add tamarind paste, turmeric, cumin, coriander, cloves, shrimp paste, lemongrass, star anise, cinnamon stick, coconut cream, water, soy sauce, fish sauce, brown sugar, curry leaves, and stir well. Bring to simmer and cook for 3 hours, low and slow.
4.Serve on steamed rice and enjoy!
