Ingredients

2 lbs potatoes
2 teaspoons caraway seeds

2 small onions

1 -2 pinch sugar
fresh ground pepper , to taste
2 tablespoons vegetable oil
3 tablespoons parsley , chopped
1/2 lb bacon
Bavarian potato salad, also known as Bayerischer Kartoffelsalat, is a traditional side dish in Bavarian cuisine. It's a lighter version of potato salad that usually doesn't have any mayonnaise or sour cream in it, just a light dressing that allows the flavor of the potatoes to shine through. Instructions

1.Peel and slice potatoes into 1/4 inch thick slices.
2.Toast caraway seeds in a small skillet over medium heat until fragrant, about 1-2 minutes. Set aside.
3.Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and transfer to a large bowl.
4.While the potatoes cook, chop the onions and fry bacon until crispy. Set the bacon aside on a paper towel to drain excess fat.
5.In a small saucepan, combine chicken broth, white wine vinegar, sugar, and black pepper. Bring to a boil, then remove from heat.
6.Add onions, vegetable oil, and chicken broth mixture to the bowl of potatoes. Sprinkle caraway seeds over the top, then gently toss to coat.
7.Crumble the crispy bacon over the potato mixture and sprinkle with chopped parsley. Serve warm and enjoy!
