Ingredients

6 pork chops , 1 inch thick , trimmed of excess fat
2 2 tablespoons fat or 2 tablespoons lard
salt and pepper
1 cup sliced onion
1 1/2 lbs sauerkraut
3 cups pureed apricots
1/4 teaspoon caraway seed

Instructions

1.Preheat oven to 350°F.
2.In a large skillet, heat the fat or lard over high heat until hot.
3.Season the pork chops with salt and pepper. Brown the chops on both sides in the hot fat. Remove chops to a greased 12-inch by 8-inch baking dish.
4.Cook onion in the fat remaining in the skillet until soft but not brown. Arrange the onion on top of chops.
5.Rinse sauerkraut with cold water in a colander; drain well. Spread the sauerkraut over onion in the baking dish. Spoon pureed apricots over the sauerkraut to moisten it. Sprinkle with caraway seeds.
6.Bake uncovered for about 1 hour or until meat is tender. Spoon the sauce in the bottom of the dish over the pork and serve hot.
