Ingredients

2 lbs calamari , cleaned , cut into rings
6 tablespoons cornstarch
8 cups oil , for frying
6 leaves iceberg lettuce ( large )

Instructions

1.In a bowl, whisk together the salt, pepper, minced garlic, fish sauce, white wine, eggs, paprika, hot pepper sauce, and flour.
2.Add the cleaned calamari rings to the bowl and mix well.
3.Sprinkle cornstarch over the calamari and mix until it’s coated well.
4.Heat the oil in a deep pot and add the coated calamari one by one, frying until golden brown, about 3-4 minutes.
5.Use a slotted spoon to remove them from the oil and place them onto a paper towel to drain excess oil.
6.Serve the fried calamari on a bed of iceberg lettuce and dip in curry mayonnaise.
