2 tablespoons peanut oil
1 teaspoon cumin seeds

1 pinch asafoetida powder
1 small onion , chopped
1 tablespoon grated fresh ginger root
1/2 teaspoon ground turmeric
1 tomato , chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground red pepper
4 cups peeled and cubed potatoes
2 cups water
1/2 teaspoon white sugar
salt to taste
1 teaspoon chickpea flour ( besan ) ( optional )
2 tablespoons chopped fresh cilantro

Instructions

1.In a large pot, heat peanut oil over medium-high heat and add cumin seeds, mustard seeds, fennel seeds, dried red chile peppers, and asafoetida powder. Stir until the spices become fragrant.
2.Add chopped onions and ginger. Cook until onions turn translucent.
3.Mix ground turmeric, chopped tomato, ground cumin, ground coriander, and ground red pepper into the pot. Mix well.
4.Add peeled and cubed potatoes, water, white sugar, and salt. Stir well. Cover and simmer until potatoes are cooked through.
5.Sprinkle chickpea flour, if using, over the curry and stir to thicken the sauce.
6.Remove from heat and garnish with fresh cilantro. Serve hot with rice or bread.
