Ingredients

4 liters fresh whole milk
200 g sugar
200 g Nestle sweetened condensed milk
8 -10 8 -10 pieces cashews or 8 -10 pieces raisins
2 teaspoons cardamom powder
1/2 teaspoon saffron , soaked in
2 tablespoons warm milk
Basundi is a popular Indian dessert that originated in the western states of Gujarat and Maharashtra. Instructions

1.Pour the fresh whole milk in a thick-bottomed wide pot or pan, put the pan on medium heat and let the milk come to a boil, stirring occasionally.
2.Lower heat to simmer and let the milk cook for approx. 2-2.5 hours, occasionally stirring and scraping the milk solids from the sides of the pan and mixing it in. Scrape the thickened milk from the sides to the center to avoid any burning.
3.Once the milk reduces to almost half, add sugar, Nestle sweetened condensed milk, cashews or raisins, cardamom powder, and saffron soaked in warm milk, mix well and cook for approx. 7-8 minutes on low heat or till the sugar dissolves and the milk thickens some more, stirring occasionally.
4.Turn off the heat and let the Basundi cool to room temperature. Once cooled, bring it to the refrigerator to chill and thicken.
5.Garnish with your choice of dried fruits and nuts and serve chilled.
