Ingredients

5 lbs skinless chicken pieces , washed
1 1/4 cups lemon juice
1/2 cup white wine vinegar
1/2 cup peanut oil
3 onions , sliced
2 sprigs fresh thyme
red pepper , to taste
2 cups water
4 bay leaves
Basque Chicken Yassa is a popular dish in West Africa but has its roots in Basque Country - a region in Spain. The dish is believed to have originated from the well-known Senegalese dish, Chicken Yassa, but with its own unique twist. The dish is made by marinating the chicken pieces in a blend of lemon juice, white wine vinegar, and peanut oil for 2 hours prior to cooking. The dish derives its tangy taste from the acidity of the lemon juice. It is a must-try dish that will excite your taste buds.

Instructions

1.In a large bowl, combine lemon juice, white wine vinegar and peanut oil.
2.2.Mix in sliced onions, thyme sprigs and red pepper to taste.
3.Add in the chicken pieces to the marinade and coat them well.
4.Allow to marinate for atleast 2 hours or overnight in the refrigerator.
5.5.Heat a large pot or dutch oven over medium-high heat.
6.6.Place the marinated chicken pieces into the pot. Add the marinade and 2 cups of water.
7.Add in bay leaves and mix to combine everything in the pot.
8.Bring the mixture to a boil then lower the heat to a gentle simmer and cook until tender.
9.Stir occasionally and let it cook for about 45 minutes until chicken is cooked through and tender.
10.Serve hot with rice or roasted veggies of your choice.
