Ingredients

1 medium zucchini , cut into 1/2 inch cubes
2 tablespoons olive oil
2 teaspoons salt , plus more to taste

1 tablespoon unsalted butter
1 medium white onion , chopped
1 1/2 cups basmati rice , rinsed and drained
2 1/2 cups chicken broth
2 red bell peppers , roasted , peeled and diced
1/2 cup chopped fresh flat-leaf parsley
4 -5 basil leaves , cut into thin strips

Instructions

1.Preheat the oven to 425°F.
2.In a small bowl, toss the zucchini with 1 tablespoon of olive oil and 1/2 teaspoon each of salt and pepper.
3.Spread the zucchini out in a single layer on a baking sheet and roast for about 15 minutes, or until just tender.
4.In a large skillet, melt the unsalted butter over medium heat.
5.Add the chopped onion and sauté for 5-6 minutes, or until softened.
6.Stir in the basmati rice, chicken broth and 1 1/2 teaspoons of salt.
7.Bring the mixture to a boil, then reduce the heat to medium low, cover the skillet, and simmer for 12-15 minutes, or until the rice is tender and the liquid has been absorbed.
8.Remove the skillet from the heat and let it rest for 5 minutes.
9.Fluff the rice with a fork, and then stir in the roasted zucchini, roasted red peppers, parsley, basil leaves and remaining tablespoon of olive oil.
10.Season with salt and pepper to taste.
11.Serve the pilaf hot or warm.
