1 inch piece of rind for parmigiano-reggiano cheese
1 lb Italian turkey sausage
2 cups basil pesto

Instructions

1.Heat 6 tablespoons of vegetable oil in a large pot over medium heat. Add red onions, zucchini, Italian green beans, celery, and garlic. Cook for 5-6 minutes until vegetables are tender.
2.Pour chicken stock into the pot and add carrots, red kidney beans, great northern beans, diced tomatoes, tomato sauce, and water. Add bay leaves, dried oregano, and Italian seasoning. Simmer for 30 minutes, stirring occasionally.
3.Remove bay leaves from the pot and add spinach, pasta, and red wine. Stir. Add parmigiano-reggiano cheese rind and let it cook for another 15-20 minutes.
4.In a separate pan, heat 3 tablespoons of vegetable oil over medium heat. Add the Italian turkey sausage and cook until browned. Drain, then add it to the soup pot.
5.Add basil pesto and stir until well combined. Serve hot.
