Ingredients

1 -2 cup Thai basil , leaves separated from the stem
1 tablespoon sugar
2 garlic cloves , chopped
2 tablespoons fish sauce
2 long thin Japanese eggplants ( one regular )
2 -4 chili peppers , I used hot ones
1 cup water

Instructions

1.Heat oil in a wok or skillet over medium-high heat.

3.Add the eggplant to the wok and stir-fry for 2-3 minutes, or until the eggplant starts to soften.
4.Add the water and sugar to the wok and stir until the sugar dissolves.
5.Add the fish sauce and continue to stir-fry for another 2-3 minutes, or until the eggplant is fully cooked.
6.Add the Thai basil to the wok and stir-fry for an additional 30 seconds.
7.Serve hot with steamed rice.
