2 eggs

Instructions

1.Heat up the powdered milk and milk in a saucepan until it begins to steam, then take it off the heat.
2.Add the basil to the saucepan and let it steep for 10 minutes. Strain out the basil and discard it.
3.In a clean saucepan, heat up the 1/2 cup sugar, coriander seeds, and 2/3 cup sugar until the mixture turns a golden caramel color.
4.Add in the lime juice, wattleseed, and chopped apricots. Stir and let simmer for 10 minutes.
5.In a bowl, whisk together the eggs and cornflour until smooth.
6.Add in the steeped milk mixture and stir until well combined.
7.Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with enough hot water to come halfway up the sides of the ramekins.
8.Bake in the oven at 160 C for 30-40 minutes, until the custard is set.
9.Remove the custards from the oven and let them cool to room temperature.
10.Serve the custards topped with apricot caramel and a dollop of thickened cream.
