8 slices bacon , trimmed
250 g cherry tomatoes
1 tablespoon olive oil
sea salt , to taste
cracked black pepper , to taste
4 eggs
1/4 cup cream
1/2 cup parmesan cheese , finely grated
1/2 cup basil leaves , chopped
20 g butter
8 slices sourdough bread

Instructions

1.Preheat the oven to 180°C(356°F).
2.Lay the bacon slices on a lined baking tray. Halve the cherry tomatoes and toss them with olive oil, salt and black pepper on the same tray.
3.Bake for 10-15 minutes, or until bacon is crisp and tomatoes are soft.
4.In a mixing bowl, whisk together the eggs, cream, parmesan cheese and chopped basil leaves.
5.Heat the butter in a non-stick pan.
6.Dip the sourdough slices one at a time in the egg mixture and allow them to soak.
7.Fry them in the pan until golden brown.
8.Arrange the bacon, tomatoes and French toast on a serving dish and serve.
