5 -6 fresh tomatoes
1 onion
3 -5 garlic cloves
3 tablespoons cilantro
1 teaspoon cumin
1 tablespoon salt
1/4 cup lime juice
1/8 cup vinegar
1 poblano pepper
1 chipotle pepper
1/4 cup corn oil

Instructions

1.Rinse and chop the fresh tomatoes into small pieces. Chop the onion into small pieces as well.
2.Peel and mince the garlic cloves, and finely chop the cilantro.
3.In a large pot, heat the corn oil over medium heat. Add the chopped onion and minced garlic and cook for 2-3 minutes until soft.
4.Add the chopped tomato, poblano and chipotle peppers, salt, cumin, lime juice, and vinegar to the pot. Bring to a boil, then reduce heat to low and let simmer for 1 hour, stirring occasionally.
5.Remove from heat and let cool. Use an immersion blender or food processor to blend the salsa to your desired consistency. Add more salt or lime juice if needed.
6.Serve fresh or store in the fridge for up to 5 days.
