6 black peppercorns

2 tablespoons dry white wine
1/4 cup heavy cream
1 1/2 cups cold butter , cut into 1/2 inch pieces

Instructions

1.In a small saucepan, combine shallot, bay leaf, black peppercorns, white wine vinegar, and dry white wine.
2.Cook over medium heat until it reduces to about 1 tablespoon of liquid.
3.Add heavy cream and continue cooking until it reduces to about 2 tablespoons.
4.Reduce heat to the lowest setting and start whisking in cold butter, one piece at a time, until the sauce becomes smooth and creamy.
5.Remove from heat and strain the sauce through a fine-mesh sieve.
6.Beurre Blanc is ready to serve.
